If you followed this KB then you can safely uninstall Exchange 2000,
http://support.microsoft.com/default.aspx/kb/307917
You can also turn off the old Exchange 2000 Server for a week to insure everything is working Ok before you remove it.

I am retiring the first exch2k server in the organization and have followed the KB articles...
I have some doubt before I try to uninstall exch2k.
Under FOLDERS, PUBLIC FOLDERS - VIEW SYSTEM FOLDERS.
There is a folder called "Schema" and if you highlight Schema on the left hand side, on the right hand pane, on the status tab the exch2k server is referenced.
Same goes for the folder, "Schema-root", and folders underneath schema-root.
The articles didn't say to change anything with these folders, but because I see the old exch2k that makes me concerned.
Any ideas about what i'm seeing?
