Designed for standalone server (not domain-joined), but will work on member
server(s) as well.

All Exchange Server 2007 server roles require x64 servers and x64 Windows
Server 2003 OS. (SP1 will work on Windows Server 2008 as well... ).

Recommended ram and system specs?

Also.. should we decide to hold off on the Edge idea.. can we install
antivirus and antispam on the main box instead?


Yes, you can install anti-spam agents on Hub Transport servers.

"Better" is subjective - there are quite a few anti-spam & anti-virus
alternatives.

Not sure about Action Pack, but Exchange Server 2007 Std. Edition does not
include ForeFront. If you buy Ent CALs, you do get ForeFront. Having said
that, licensing questions are best answered by your MIcrosoft rep or
software vendor.
