I understand about specifying User A with send as rights in the properties
of user B.
But how do I get the mail sent from User B to appear in User B's sent items,
not User A's?

That's by design. There's a KB for the Deleted Items folder but the
person who sent it, sent it and that's where the sent item will sit.
