Check all your Exchange servers to see if you have any event sinks
registered from any custom code or third party apps.
Download smtpreg.vbs
1. Once you have the smtpreg.vbs file, copy it to the root of your C:
2. Open command prompt, start run, cmd.
3. Type the following: C:\cscript smtpreg.vbs /enum
To pipe to a text file to easy viewing type:
C:\cscript smtpreg.vbs /enum > c:\file.txt
Then search through the file for the email address string that it gets
copied to.

I know that you can use journaling to do this, (but it's not enabled on this
server), but have inherited a server with auto copy of outbound emails to
specific recipients, but I can't see how it's been done.
There is no 3rd party software installed.
