Thanks Oliver, that sounds straightforward.
Last question: if I want the E2K server to use the E2K3 VS, is the
change immediate or do I have to restart any services?
That said I think we'll start with separate bridgeheads on each
server, then move mailboxes/PFs and decommission the E2K server.

Just change the bridgehead on the SMTP connectors settings to use the SMTP
VS of your new E2K3 server, ensure this server is allowed to route traffic
out on port 25 to your smarthost (a simple telnet before changing the
bridgehead settings).
You can also have multiple bridgeheads so both servers could sit and forward
mail to your smarthost, that decision is up to you.

We've just installed our first E2K3 server alongside our existing E2K
server.
Can someone please briefly explain how to move the SMTP connector
from E2K to E2K3, transparently to the users? Alternatively, if not
move it, is it possible to simultaneously have an SMTPC on the E2K3
server? In that case, how would Exchange know which to use?!
Right now, the SMTPC forwards all mail to a smarthost. The E2K server
is not authoritative for the SMTP domain; we only have 50 mailboxes on
Exchange and a few thousand on another mailsystem.
We're afraid of causing routing problems, or even preventing users
logging on via OWA (we've had to add secondary user@localhost-type
SMTP addresses to get that working).
