Do you have deleted item retention set on the store? You should, its
enabled by default. Can not you simply recover from the dumpster under
the deleted items folder in Outlook?
How did the user delete the items? If hard deleted then
google "DumpsterAlwaysOn" and enable the registry tweak to recover
under the inbox or other folders via Outlook.
If all else fails, recovery to the RecoveryStorageGroup. You can
google that as well! :)
