I agree completely with Mark. It's highly improbable that you'll be able to retrieve *everything* that this employee sent/received for an entire year unless you implemented Message Journaling, backed up the mailbox/Public Folder that you journaled to and retained all of the backups...

If you absolutely must try and recover as much as you can, you might want to invest in a third party solution that will let you restore the Information Store to another machine, search for messages/recover the mailbox, and export the messages. Quest Software's Recovery Manager for Exchange springs to mind immediately. It might be easier that utilizing the Recovery Storage Group (but of course it's not free).

You are in for a huge amount of work with the Recovery Storage Group.

Since you are unlikely to catch everything, i.e. messages that came in
and were deleted on the same day (i.e. never got backed up) I would
suggest that you go back to the business and tell them it will take
you a couple of weeks to do and won't capture everything. Given that
you are looking for anything dodgy that a user may have done you can
probably be assured that you won't find what they're looking for.
