I found the RUS settings that I will need to change manually, I am afraid I
will miss something...

There is, in Exchange System Manager a couple of places where you
select a DC to connect to. OAB is one of them if memory serves (I'm
not near a legacy 2003 box at the moment).
The DSaccess tab contains the GCs, DCs and Configuration DC. As you
add new GCs just keep an eye and make sure that the location is
picking up the new servers. When a suitable DC comes into there you
can change the Configuration DC to a new one.
