Domain Controller Removal

I have several Windows 2000 DC's and several Exchange 2000 servers.
We are planning to upgrade the DC's to 2003
All of the DC's are going to be replaced with new hardware and new names.
We were planning on Adpreping the domain running the exchange.ldf fix and
adding a new 2003 DC and then transfer all the roles.
Then one by one replace all the DC's.
My question is the following.
Is there anywhere to tell on the Exchange servers where all domain config is
stored?
I found the RUS settings that I will need to change manually, I am afraid I
will miss something...

Thanks for the help
