removing server

I had an Exchange 2000 server. I've since migrated to (on a new server)
Exchange 2003.
Both servers were running up until a few weeks ago, at which point I stopped
the Exchange services on the old server. I wanted to make sure the new one
would still run properly, and with the exception of a couple of public
folder issues, it does. I can fix those issues no problem.
I now want to remove the old Exchange Server.
What's the safest way to go about that?
