Look to the SAN vendor for a migration tool. I do know that NetApp
SnapManager for Exchange has the ability to move everything over.

It's not as easy as you would think. Yes, you can move the databases and
logs with ESM, but these aren't the only critical components that depend on
disk. You'll also need to set the working directory to point to the new
(valid) drive, or you'll start seeing the infamous event id 327 failing on
ecsetfilehandleprop. If you have an MTA instance, you'll want to change the
database path and run directory to a valid location as well. Don't forget
message tracking logs if you have them enabled, and there's the gatherer
logs for the search instance. Before decommissioning any old drives,
you'll want to be absolutely shure there's nothing on them that exchange is
still accessing.

We currently have an Exchange 2003 Server SP2 which is starting to reach
the
limits of the hard disk space available on the sevrer. We will shortly be
obtaining a SAN for use with the storage of the mailbox/public folder
stores
and other additional file storage.

My quesion is, how would I go about the moving of the stores from the
local
hard drives to the new SAN storage? I've had a look around and havent
found
any solid information for this procedure.
