To add more information to the issue, here's what I'm thinking of
doing:

Server Names (as examples):

Netbackup Server: Netbackup
Exchange Server: Exchange
Recovery Server: ExchRecovery

In Netbackup I right click on the server name in the left payne and
choose "Specify Netbackup Machines and Policy Type". In here I have
the following selected:

Server to use for backups and restores
Netbackup

Source client for restores
Exchange

Destination client for restores
ExchRecovery

Policy Type for restores:
MS-Exchange-Server

Then I click on Actions>Start Restore of Marked Files

Then on the restore marked files tab I have selected "Restore
individual folders and file sto different locations" and I have this
pointed to a network drive where I can store the databases

On the Microsoft Exchange tab everything is unchecked.

Would this work?

it's going to restore the files to.
