Question on Backup Method

What is the problem on stopping Exchange Services manually and then backing
up PRIV and PUB databases elsewhere? Then starting services back up. Just
curious because things I've read say its better to have online backup - i.e.
NTBackup. Is it because the Information Store down during this process?
