What do you find in the SMTP Protocol Logs on the Exchange server? Do
you see the expected address in the MAIL FROM commands that are
logged?

Everything I have found to date is pointing to Exchange having a
problem properly doing the smtp communication.

Or a problem with the connection between Postfix and Exchange.

It looks like about 8
queues have emails in this 'stuck' mode. Two are inside out domain
(the 2 list server) and the rest are outside servers, which most seem
to be k12 schools.

If you look at the messags in the ESM queue viewer, do they have the
correct addresses?

On the W2k3 server where do I look to see what errors Exchange is
getting when it tries to smtp to our mailman list server?

The SMTP Protocol Logs. Make sure you're logging enough data to make
the logs meaningful. If you don't know what to log, log it all.
