SMTP and MAPI/RPC are two very different protocols. A MAPI/RPC client
like Outlook doesn't use SMTP so you'll never find information about
those clients in the SMTP protocol log file.
If you need more information recorded in the SMTP protocol log, then
check ALL the boxes in the log file properties.
