I was also looking at downloading Server 2003 eval, but do I really need to
in this case? What problems will I have running Exch 2003 on 2000 Server ?

*Please* keep in mind that in your case, you can download either the
Standard OR Enterprise Eval, but if you download the Enterprise eval, you
*cannot* install the retail Standard over the top as that is considered a
downgrade. Options are:

Eval Standard -> Retail Standard
Eval Standard -> Retail Enterprise
Eval Enterprise -> Retail Enterprise.
