You can make him a mail-enabled user vs. a mailbox-enabled user. The latter
of course has a mailbox on your internal Exchange server. The MEU simply
has an email address. This allows him to receive email as
user@xxxxxxxxxxxxxxx but your Exchange server will foward it to
user@xxxxxxxxxxxxxxx Thus keeping the email on his server and not yours...

You can setup a MEU by creating a user account but not setting up the
mailbox when prompted. After the account is created you can use the
Exchange tasks to establish an email address for him. You'll be prompted to
enter his email address...that's it. He will have an entry in your global
address list and a user account to access your internal AD resources as you
permit.
