You can turn off the diagnostic logging for the transport. I don't think
that will give any new information.
For SMTP logging, on the SMTP Virtual Server, enable logging, then on the
Extended tab enable the following:
date
time
client IP address
method
uri stem
uri query
protocol status
protocol substatus
Then restart the SMTP service and send a test message.
You should see files created in WINNT\SYSTEM32\LOGFILES\SMTPSVC1
