I'd recommend selecting ALL the advanced logging options. It can't hurt to
have too much logging. Since it's just a text file, the extra logging
options really won't take up much more space.

As far as what to look for, it's really hard to say until it happens again.
If it happens, you will want to look through the smtp protocol logs and get
all the details associated with that conversation. Your gateway server will
have 2 separate converstations for successful messages - once from the
sending server to the gateway server, and then again from the gateway server
to Exchange.

It's also possible that the remote system is simply spitting out a message
to the effect of "message submitted" while not showing the true status of
the message...
