Mail users have left the company

Exchange 2000
I have recently had a number of folk leave the company and I have removed
their mailboxes.
Currently, any mail sent to them is now redirected to the administrator's
mailbox.
Is there a way to reject these email messages rather than accept them by the
administrator.
