He had posted in another thread on the same issue and here is what I had to
do using his recommendations.

I was unable to delete the store. I had to dismount the store and then
move/delete EDB and STM files. Start the services and mount the store once
again. (This caused it to re-create the databse/store) However I was stil
unable to un-install Exchange. It still told me that there was a user
associated with that store even though ESM said nothing except SMTP and
system mailbox.

I then had to open up ADSI Edit and browse to -
Configuration Container-->Configuration-->Services-->Microsoft
Exchange--><Organization Name>-->Administrative Groups--><AG
Name>-->Servers--><Server Name>-->Information Store-->First Storage
Group, highlight the mailbox Store, and open its Properties.

There was a "Backup Exec user" that had been setup prior to my arrival here
and is no longer used in the function of backups. I however was unable to
remove them with the ADSI Edit utility. I kept getting an error message "The
attribute cannot be modified because it is owned by the system". Since this
account was still in the highest level of our forest but not being utilized,
I removed the account, forced a replication and was then able to remove the
account. Exchange is un-installing as I type.
