The mailboxes will be moved quite easily. I'm pretty sure that if you are
using the ADC to replicate information, the Custom Recipients will be
replicated as mail-enabled Active Directory Contacts. That's probably the
way to go here.

If for some reason, the CR's aren't being replicated to AD, then you would
simply need to create a mail-enabled contact (assign the smtp address during
creation as the remote address), then once the mailbox is moved, replace the
CR with the contact in the Alternate Delivery options.
