To my knowledge, this isn't something that can be managed by Exchange. Once you invite someone to a meeting, and they accept the invitation, the meeting gets placed on their calendar. The only way to remove that is to have them delete it, or to send out a meeting cancellation notice. Deleting the meeting organizer's mailbox will not automatically remove that meeting from all invitees calendars.
