Just a shot since it's a few days without a response....
Have you considered utilizing Outlook Web Access to setup the OoO? I have
end users that setup their OoO and change it when they are on the road via
OWA.
(Note: I am not sure if OWA works with the Mac platforim in a robust
manner as it does with the WIntel platform...but it is worth a shot).
