I misinterpreted your first question. Yes, change the MX record to point to
the Exch2003 server and leave Exch5.5 up for awhile if you want. Just make
sure you create the appropriate Exch2003 SMTP connectors to replace the
Exch5.5 IMS, if necessary.
Regarding your other question, I found an article for you. See
http://support.microsoft.com/default.aspx?scid=kb;en-us;822450. Make sure
you follow that.
