You're using circular logging? Ugh... no need to backup the logs
really is there?

Categorizer delays are unlikely related to backups... just trying to
help you narrow the scope of the question there... Do you have perfmon
running to monitor the Exchange server and GC? If so, what counters
are you monitoring?
