OK - I found the answer.

I thought I'd post the solution here for those who may
come across a similar problem.

My problem was that effectively I was sharing an SMTP
address space. the @bris.company.com.au was like a subset
of the @company.com.au address.

There are Policies governing the email address formats in
Exchange 2003. These can be found in Exchange System
Manager - Recipients, Recipient Policies.
Go into the properties of the Default Policy, and click
the E-Mail Addresses (Policy).

I tried creating the required SMTP address
(@company.com.au) and setting this as the reply address
for each user, but that was what was creating the problem.
What I should have done was edit that new address and
UNTICK "This Exchange Organisation is responsible for all
mail delivery to this address" option! Duh!

Once I had done this, I could then set each users'
default address to this new policy template and their
reply address was set as desired!
