runing exchange on a gc isn't always a good idea.

so, what makes you think it's a memory leak? normal behavior of the
store.exe it to use as much of the installed ram as possible, leaving
about 4.5 MB unused. this is usually evident on machines with with 1GB
or less of memory. with more memopry, the store levels off at between
900 and 1300MB of memory (both are approximate figures).

>I have attempted to use Performance Monitor to see what processes are eating up the memory. STORE.EXE is typically the culprit; but it takes a day or two for it to climb up. It seems to drive up the CPU usage as well after time.

increased cpu time isn't usual. but you don't say how many processors
you have, how fast they are, how much memory's installed, how many
users are active, etc. without a baseline perfmon to compare things
to, figuring out what's not right is sometimes not easy.

>After a reboot, the CPU usually only uses 1-4%. If you check it a day or two later, it is hovering between 50-75% with spikes reaching 100% percent.

i'm guessing you have eithe one or two cpu's in the machine (leaning
towards one, actually).

which threads are using the cpu? is it spread over quite a few, or
concentrated in two or three? if it's a small number, you may have a
mail loop caused by a rule in a mailbox.
