You're making this too complicated. SImply install the E2K3 server into the
Ex5.5 organization (you'll need an AD COnnector setup - the deployment tools
will walk you through that). Then use the move mailbox tool. When clients
hit the old server, their profile will be updated and will subsequently
point to the new server.

You'll have to replicate public folders, as well.
