This is what I would do:
Get a good backup. You shouldn't need it :-)
Remove IIS - Put it back with ASP.NET - SMTP, NNTP and WWW.
Run setup /disasterrecovery on Exchange
Set all the databases to mount at start-up (and mount them) and you should
be back going.
