Many users of Excel 2007 are reporting this problem; it seems to related to
the video card and/or monitor.
Try changing the Windows Appearance (right click empty space on desktop and
select properties)

When I select multiple cells for editting, Excel doesn't highlight the
cells
that I've selected. I can't find where this can be adjusted.
