Using RPC Ping utility is just for checking if there are some connectivity
issues.
To get more information, you can just add the parameter -E like this:
rpcping -s ncoantfs -v 3 -E

However I found that I missed an important paragraph of your saying:
" Once this happens, all calls from the server application to the client
application consistently fail similarly and repeatedly, even if both
applications are restarted, until the client is rebooted."
In addition to Anti-virus software influence, I recommend that you check if
you can telnet to the server TCP port 135 at that time. Also, this issue
may be able to dynamic TCP port and firewall. Please disable firewalls on
both sides or specify a TCP port range allowed in your firewall and see if
this issue persists.

To monitor the communication, you can also use NetMon. You can install the
tool from Add Remove Component or download the tool from:
