I am unsure this is exactly what you are after, however your post has
sat for a few days so I have some suggestions.

You can likely change the users home path using
\\servername\usershare\%username% in the AD template you are using to
create accounts on the SBS server. (Part of the SBS setup for users,
uses a template)

With the company deskop and user desktop icons and mapped drives, I
commented out the sbs client executable in the logon script (first line)
so that it did not auto create the shortcuts. I allowed the exe to run
the first time so it could setup outlook etc and then commented it out
the second time I logged on for the user.

I then created a batch file or scripting host file to create the new
mappings and icons to the desktop and made this the logon script for the
users.

again, making the logon script part of the AD template to create users.

In my logon script, if you using WSH script, I had it make shortcuts on
the desktop for the new shares. With a batch file, as the alternative, I
created some shortcuts to the new shares, placed them in the netlogon
folder, checked any security on the shortcuts (ntfs) and had the logon
batch file simply copy them to the local pc on logon

location for files = "%userprofile%\desktop"

I hope one of these solutions helps you with your issue.
