SBS2003 Sharepoint/Monitoring MSDE / McAfee Protection Pilot SBS

I am performing a new install of SBS2003 Premium. I need to move the
SharePoint and SBS Monitoring database from the MSDE to SQL Server becuase
I am attempting to install McAfee ProtectionPilot on my SBS. According to
McAfee support I must deinstall all instances of MSDE since the ePolicy
Orchistrate database instance was created in the SQL Server 2000 database and
there is no method to change the connection string for the ProtectionPilot
agent server.

I deinstalled SharePoint and SBS Monitoring and attempted to reinstall them,
hoping to have the option of specifing SQL Server. I do not see in the
installation process for either SharePoint or Monitoring where I can
specified the database to use.
