Auditing Excel/Word/Access Events...

Is there any way to turn on auditing for MS applications so that an event is
logged when a user opens /closes any MS application (or any app that may
reside on the server for that matter) ?
We are also interested in knowing the actual file being worked on ie.. what
.xls or .doc or .mdb file did the user open?
Is this possible?
We have monitoring software called LogCaster that relies on system events to
produce log files. However, if the action cannot be logged anywhere,
logcaster will not pick it up... That's why I need to "turn on" logging for
these apps...
We are using Windows 2000 and Windows 2003 terminal servers where these apps
are loaded and worked in. We want to monitor usage of these apps and monitor
the files employees are working on...
