Things I might try:

put the controller in another system, don't boot on it and try each raid0 in
turn as silent storage. Since the controller makes the raid0, it should not
matter if the drives are active. And since SBS will not be actually
running, it will not care that the second set is missing. See if you can
copy off your data

You will need a big enough drive in the system to hold all the data you need
to copy off.

call Adaptec support. they may have a trouble line for after hours.

Gone from bad to worse.

Before I rushed off to the store and bought a controller that wouldn't
work,
I decided to put "bad drive" issue to rest and downloaded a utility from
WD
website.

It did in fact confirm the drive is failing. So I decided to check the two
drives that I replaced, guess what, one of those are failing too.

So out of the 4 original drives, two are failing and at the moment I only
have recovered the OS partion on the two new drives.

Customers data, exchange and SQL is stuck in the E: partion. I forgot to
mention that after I was able to get the server to boot again and
everything
appeared OK, I set the mirror back up and it was syncing overnight. The
new
tape drive required a reboot and I didn't want to reboot before the sync
was
done, so still no backup.

Do you know of any disk utilities that might get me out of this nightmare?

Probably not. The stripped arrays are a creature of the adaptec card.
I guess there is a chance that another mfg could say they are "adaptec
compatible", but I would not trust the data to this promise, even if it
were offered.

How much data on each partition? I would rather see you purchase 2
temporary drives, backup and restore the data to one drive with two
partitions, and then software mirror the partitions separatly as RAID1,

Harder to type than to do:

Drive 0 = partition1 = OS and Programs, or what ever is currently on
partition1. Partition2 = data, or what ever is currently on your second
partition. Drives must be dynamic

Drive1 = blank, also dynamic.
add each partition separately to a RAID1

It has been some time since I did this, but if you can mark drive1 as
"active" please do so. You may have to create a partition, mark it
active, then remove the partition to do the mirror.

You never did say if the server has a floppy drive. :-),
