migrate SBS2K to 2003 - same hardware

I need a document. The only upgrade documents I can find describe either an
inplace upgrade or migration to a new box.

We can't do an inplace upgrade because this SBS2K server hasn't been stable
and my client has installed too much garbage since it was new. We won't be
installing a new box because their existing dual cpu box is still plenty
fast enough.

Where can I find a document that describes how to move everything off the
old server before wiping the drive and re-installing SBS2003 fresh?
