SBS 2k - TS ?group policy primer?

All,

Want to allow a single remote User access to a couple of programmes on
the Server. For various reasons I do not want to create two shortcuts,
each to a single application, forcing him to disconnect when switching
between them.

what I would really like, is a desktop on his TS session which would
only allow limited access. - Just the two apps, log out, perhaps
printers.
No access to 'shutdown', screen-savers, command prompt, email, IE. - All
the things which could nuke the Server basically.

I know enough to think this is not the best way of doing things, but
will be for ten minutes once a fortnight, so am not putting too much
pressure on the system.

I also know enough to think this would be done with Policies, and that I
can probably set things to know when he is on a local machine (so a
'normal' logon, on a 'normal' workstation) as opposed to a TS session
which I would like severely restricted.
Thing is I haven't played with policies, so know little about them.
Any pointers to resources, and perhaps a 'right-click here, go to, ....
would be greatly received!
