STORE.EXE is an integral part of Exchange, and should be running under
normal circumstances. Exchange does store maintenance in the wee hours
of the night, so it's fairly normal that its' CPU usage would climb
then.
However, there have been cases where the maintenance process stops
working properly - interference from AV software is a common reason. If
you have file server AV (non-Exchange), make sure the Exchange folders
are excluded from any scanning, realtime or scheduled.
