I have databases that require connection through Multi-protocol.
When I try to set-up the ODBC on a Vista Home Premium machine the
multi-protocol is dimmed and not available. How do I make this
available?

No one should buy any of the Vista Home varieties, just as no one
should have bought WinXP Home. It is a crippled version of Windows
that will cause endless headaches if you want to use it for normal
purposes.
