There is a bug in Access 2003 SP3 that can cause this to happen - the first table alphabetically does not appear in the list.
One trick to fix it is to add a dummy table entitled AAAA. There is probably a fix for this on MS site.

I'm using the Access 2003 Events template and am trying to append data to
one of the tables in the template - the Attendees table.
However, in selecting the Append query type, the Attendees table does not
appear as an option under "Append To/Table Name:" - all the other tables in
the database do appear.
The Attendees table does appear in the "Show Tables" list.
Any ideas?!
