Assuming Access 2003 or earlier, kook on the General tab under
Tools | Options from the menu. About half way down on the left,
you should see a check box "Recently used file list:". Uncheck it,
shut down Access then reopen it and go back and recheck it. You'll
lose all of the entries in the MRU (Most Recently Used) list:
hopefully that's okay with you.

Is it not stored in the Registry, so you could just remove the entry
from there?
