OK, being a Citrix hosted application means it's not actually using Office software components on your laptop - so it's not that fussy that your laptop runs Windows XP or Vista, just ensure you have a compative citrix client.
However, as you want to hoist the hosted A97 files up to your laptop and convert (and prototype) the replacement A2007 system, I think Windows XP Pro would be closer to 2003 that the server uses - particulary if your application code has any API dependancies like network services use?
