Actually, for now the way I solved the issue is by copying and pasting the
installation package (made by 2003 developers extensions by the way) in a
directory under the program files and not deleting it as before.
In that case I do not get any errors when unistalling. I also have not even
tried to over install an older version, I usually jsut uninstall adn then
install the new version.
I suspect however that some settings when building the package should allow
me to avoid having to do that?

I've been making some progress on this topic.

Firstly, when you try to uninstall a program using Add/Remove Programs and
get the error message "The feature you are trying to use is on a network
resource that is unavailable. Click OK to try again, or enter an alternate
path to a folder containing the installation package xxxxx.msi in the box
below", it is not enough to find a copy of the original msi file. You are
likely to get another error message, i.e. "The file xxxxx.msi is not a
valid installation package for the product xxxxx. Try to find the
installation package xxxxx.msi in a folder from which you can install
xxxxx".

The reason why my original installation files were unavailable for the
uninstallation process was simply because I was packaging the result of
using the Access 2003 Package Wizard in a 'software installation' version
of a WinZip Self-Extracting file. This self-extracts all the setup files
to a temporary folder that is deleted at the end of the installation!
However, you can create a simpler flavour of a WinZip self-extracting file
that will let you specify the destination for the setup files and this
does NOT get deleted - and thus later uninstallation is straightforward.

As far as I can see, the only way to deal with "The feature you are trying
to use is on a network resource that is unavailable...." errors when you
no longer have access to ALL the original installation files (not just the
msi), is to carefully search for and delete all references to the
application in the Registry. That worked for me.
